Antonin Dvorak traveled from his native Czechoslovakia to New York in 1892, where he took almost daily coffee and cigars at Fleischmann's cafe on Tenth and Broadway.
Rustling up bratwurst in a pan, he proceeded to wash it down with a stein of beer.
"We can say this is what Dvorak might have enjoyed," he said. "But really, any of the guys I've researched, from Germany or Austria, might have eaten this in their time."
When Dvorak premiered a piece up in Boston, Somers said a New York critic was less than impressed: "What was the reviewer's line? 'It's like being served a meal where everything is cold except the ice-cream.'"
